Beet Root Thoran

- 1 unit White onion (Chopped)
- 1 teaspoon Mustard seeds

- 2 sprigs Curry leaves

- 3 tablespoons Coconut oil
- 0.5 cup Coconut, shredded
- 0.5 teaspoon Salt (Adjust to taste)

Instructions
- 1Clean the beetroot thoroughly, wipe it with a cloth, and grate it finely.
- 2In a clay cooking pot, heat coconut oil over medium heat. Add mustard seeds, dry red chillies, curry leaves, and chopped onions. Sauté until the onions are translucent.
- 3Add the grated beetroot, turmeric, and salt to the pot. Mix well and cover with a lid. Cook on low flame until the beetroot is tender.
- 4Add the shredded coconut to the pot and mix well. Cook for a few seconds to combine the flavors.
