Instructions
- 1Finely chop the beetroot using a food processor or grater. Chop the onions finely and slit the green chillies lengthwise.
- 2Heat coconut oil in a pan over medium heat. Add the green chillies, onions, dried red chillies, and curry leaves. Stir until the onions become translucent.
- 3Add the grated beetroot to the pan. Sprinkle with water and salt, then cover with a lid. Cook for 10 minutes, stirring occasionally.
- 4Remove the lid, stir the mixture, and sprinkle additional water as needed. Continue cooking for another 20 minutes, stirring every 10 minutes, until the beetroot is tender.
- 5Add the grated coconut to the pan and cook for an additional 5 minutes. Finish by stirring in 1 teaspoon of coconut oil for enhanced flavor.
