Jalebi/Indian Dessert

Ingredients

  • 1 cup All purpose flour
  • 0.33 teaspoon Baking powder
  • 0.5 teaspoon Turmeric (For color)
  • 0.5 cup Split black lentils (Soaked for 2 hours and finely ground)
  • 2 cups Sugar
  • 6 units Green cardamom pods
  • 0.5 unit Lemon
  • 3 cups Oil (For frying)
  • 1.5 cups Water (For sugar syrup)

Instructions

  1. 1In a bowl, combine 1 cup of all-purpose flour, 1/3 teaspoon of baking powder, and 1/2 teaspoon of turmeric powder. Gradually add water while stirring to form a thick, smooth batter, ensuring there are no lumps.
  2. 2Add 1/2 cup of soaked and finely ground split black lentils to the batter. Mix thoroughly to combine.
  3. 3In a saucepan, combine 2 cups of sugar and 1.5 cups of water. Heat until the mixture forms a one-string consistency syrup. Allow to cool slightly, then add cardamom powder.
  4. 4Fill the batter into a piping bag or a plastic bottle with a small opening.
  5. 5In a kadhai, heat 3 cups of oil over medium flame until hot.
  6. 6Carefully pipe the batter into the hot oil in a spiral shape. Fry until golden brown on both sides.
  7. 7Remove the jalebi from the oil and immerse in the sugar syrup for 2 minutes.
  8. 8Serve the jalebi hot.
