Shankar Pada
Shankar pada - flaky, sweet, melt-in-mouth, and crispy. A beloved Diwali snack that you can't stop munching.
Ingredients
- 0.25 cup Sugar (Powdered using a mixer grinder)
- 1 cup All-purpose flour (Also known as refined flour or maida)
- 1 teaspoon Sooji (Also known as semolina or cream of wheat)
- 2 teaspoons Ghee
- 0.5 teaspoon Salt (A pinch)
- 0.5 cup Oil (For deep frying)
- 0 as needed Water (To knead the dough)

Instructions
- 1Using a mixer grinder, grind the sugar into a fine powder.
- 2Sieve the all-purpose flour into a bowl. Add a pinch of salt, ghee, powdered sugar, and sooji. Gradually add water and knead into a soft dough.
- 3Roll the dough into a flat disc using a rolling pin and board. Cut the disc into diamond-shaped pieces.
- 4Deep fry the diamond-shaped pieces in oil until they turn golden brown. Store them in an airtight container.
