Step 1
Heat coconut oil in a pan. Add ginger-garlic-fennel-pepper mix and saute well.
Step 2
Then add sliced onions ,green chillies, curry leaves and salt. Saute till onion becomes brown.
Step 3
Now add turmeric powder, kashmiri chilli powder, coriander powder and garam masala. Mix well and cook until the raw smell of the masalas goes away.
Step 4
Add chopped tomatoes. Mix well and close the lid and cook well. Wait until the tomatoes turn mushy. Add little bit of water and cook. You can also add little bit of sugar. It gives a nice taste to the egg roast.
Step 5
Finally add the boiled eggs and roast for 2 more minutes.
