Fried Dates (Khajur Talelo)
Plump Muskati dates are gently fried in pure ghee until warm and tender, then tossed with crushed rock sugar for a delightful finish. This traditional Gujarati preparation transforms simple dried fruit into a rich, caramelized sweet that balances the natural chewiness of dates with the crunch of sugar. Perfect as a long-lasting preserve, these dates can be stored in a glass jar to be enjoyed as a wholesome dessert or energy-rich snack.
Ingredients
- 1 cup Dates (Muskati or Medjool) (Quantity estimated. Use high-quality soft dates.)
- 3 tablespoons Ghee (Quantity estimated for shallow frying. Use pure ghee for best flavor.)
- 2 tablespoons Rock sugar (crushed) or granulated sugar (Quantity estimated. Originally 'Chinese rock sugar'.)
Instructions
- 1Clean the dates thoroughly and remove the pits (seeds).
- 2Heat the ghee in a pan over medium heat. Add the pitted dates and fry them gently. Be careful not to fry them until they become hard or very crisp; they should remain tender.
- 3Remove the dates from the heat and immediately mix them with the crushed rock sugar while still warm. Serve immediately or allow to cool.
- 4To preserve, place the cooled dates in a glass jar with a tight-fitting lid (or cork stopper). Stored this way, the dates will remain fresh and good for many days.
