Ingredients

  • 2 cups All-purpose flour
  • 1/2 teaspoon Salt
  • 3 teaspoons Baking powder
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Butter
  • 1 large Egg
  • 1 cup Milk
  • 1 teaspoon Molasses
  • 1 tablespoon Butter (Quantity estimated (not specified in original recipe). For greasing muffin tins.)

Instructions

  1. 1In a large bowl, whisk together the flour, salt, baking powder, and sugar. Sift these ingredients twice to ensure they are well combined and aerated.
  2. 2Rub the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. 3Separate the egg. In a separate bowl, beat the egg yolk. Add the yolk to the milk and molasses. Mix well.
  4. 4Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. In a separate bowl, beat the egg white until stiff peaks form. Gently fold the beaten egg white into the batter.
  5. 5Preheat oven to 400°F (200°C). Grease muffin tins with butter. Pour the batter into the prepared muffin tins, filling each about 2/3 full. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
