SQUASH SALAD (TURKISH STYLE)
This refreshing Turkish-style squash salad is a delightful and unique way to enjoy summer squash. The squash is fried to golden perfection and then tossed in a tangy, flavorful sauce. This simple yet elegant salad offers a satisfying combination of textures and tastes, making it a perfect side dish or light meal. Ingredients
- 2 medium Long squash (zucchini or similar)
- 1/4 cup Olive oil
- 2 tablespoons White wine vinegar
- 1/2 teaspoon Prepared yellow mustard
- 2 medium Shallots
- 2 tablespoons Olive oil
Instructions
- 1Grate off the skin of the squash. Slice the squash into 1/4-inch thick slices.
- 2Heat 1/4 cup of olive oil in a large skillet over medium-high heat. Fry the squash slices in the hot oil until golden brown and tender, about 5-7 minutes per side. Remove the squash from the skillet and set aside.
- 3In a small bowl, whisk together the vinegar, mustard, and 2 tablespoons of olive oil until well combined. Finely chop the shallots and add them to the sauce.
- 4Pour the sauce over the fried squash and serve immediately.
