Ingredients
- 1 cup Long-grain rice
- 4 tablespoons Butter (or olive oil) (Originally poultry fat. Substituted with butter or olive oil for modern preference.)
- 3 units Onion (Chopped)
- 2 cloves Garlic (Minced)
- 1 unit Red bell pepper (or canned pimento) (Chopped)
- 1 teaspoon Paprika
- 3 units Ripe tomatoes (or strained tomatoes) (Or 2 cups strained tomatoes)
- 1 teaspoon Salt
- 2 cups Boiling water (Estimated (not specified in original recipe))
Instructions
- 1Rinse the rice under cold water until the water runs clear. In a frying pan, melt the butter (or heat the olive oil) over medium heat. Add the chopped onions and minced garlic. Cook for 5 minutes, or until softened.
- 2Add the chopped red pepper (or pimento) and paprika to the pan. Cook for 5 minutes, stirring occasionally.
- 3Add the tomatoes (or strained tomatoes) and salt to the pan. Stir well. Add the washed rice and stir to combine. Cook for 10 minutes.
- 4Add boiling water to the pan, enough to cover the rice. Reduce the heat to low, cover the pan, and simmer for about 1 hour, or until the rice is tender and the liquid is absorbed. Add more boiling water as needed to prevent burning.
