PURIM CAKES

Ingredients
- 2 cups All-purpose flour
- 1 tablespoon Granulated sugar
- 4 large Large eggs
- 2 tablespoons Vegetable oil
- 1 pound Honey
- 1/4 pound Poppy seeds

Instructions
- 1In a large bowl, combine the flour and sugar. Add the eggs and oil. Knead the ingredients together until a dough forms. The dough should be smooth and slightly elastic.
- 2Roll out the dough to about 1/8 inch thickness. Cut the dough into squares. Fold two opposite sides of each square towards the center, creating a pocket. Use a fork to prick the tops of the squares to prevent blistering during baking. Place the squares on baking sheets and bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until golden brown.
- 3In a saucepan, heat the honey over medium heat until it boils. Add the baked squares to the boiling honey and let them boil for a few minutes to absorb the syrup.
- 4Add the poppy seeds to the honey syrup and return to the heat. Cook for a few minutes until the poppy seeds are heated through. Remove from heat. Sprinkle with cold water. Transfer the cakes to a separate dish to prevent sticking.
