Ingredients

  • 1 pound Honey
  • 1 cup Granulated sugar
  • 4 count Eggs
  • 1 tablespoon Allspice
  • 3 tablespoons Salad oil (or vegetable oil)
  • 4 cups All-purpose flour
  • 3 teaspoons Baking powder

Instructions

  1. 1Gently warm the honey in a saucepan over low heat, just until it becomes warm to the touch. Do not overheat.
  2. 2In a large bowl, rub the egg yolks well with the granulated sugar until the mixture is pale and slightly thickened.
  3. 3In a separate clean bowl, beat the egg whites until they form stiff, frothy peaks.
  4. 4Gently mix the warmed honey, the yolk and sugar mixture, the beaten egg whites, allspice, and salad oil together in a large bowl. Gradually add the sifted flour and baking powder, mixing until just combined. Be careful not to overmix.
  5. 5Preheat oven to 350°F (175°C). Pour the batter into a greased and floured baking pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
