NUT HONEY CAKE

Ingredients
- 2 cups Brown sugar
- 2 cups Honey
- 6 count Egg yolks
- 3 cups All-purpose flour
- 1/4 teaspoon Salt
- 3 teaspoons Ground cinnamon
- 1/2 teaspoon Ground cloves
- 1/2 teaspoon Ground nutmeg
- 1/2 teaspoon Ground allspice
- 1 1/2 teaspoons Baking soda (Originally soda (historical name for baking soda).)
- 1 cup Raisins
- 1/2 ounce Citron, cut in small pieces
- 1/2 ounce Candied orange peel, cut in small pieces
- 1/2 pound Almonds, coarsely chopped
- 3 count Egg whites

Instructions
- 1In a large bowl, mix together the brown sugar, honey, and egg yolks until well combined.
- 2In a separate bowl, sift together the flour, salt, cinnamon, cloves, nutmeg, allspice, and baking soda.
- 3Add the raisins, citron, candied orange peel, and chopped almonds to the dry ingredients. Mix well.
- 4In a separate clean bowl, beat the egg whites until stiff peaks form.
- 5Gently fold the beaten egg whites into the batter until just combined. Be careful not to overmix.
- 6Grease baking tins with butter. Pour the batter into the prepared tins to a depth of about 1/2 inch.
- 7Preheat oven to 325°F (160°C). Bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
