PINOCHE
Pinoche is a classic, old-fashioned candy that's simple to make and incredibly satisfying. This sweet treat features a rich, buttery flavor with a delightful combination of textures from the nuts. Made with brown sugar, cream, and nuts, it's a comforting indulgence perfect for any occasion.
Ingredients
- 1 cup Packed medium brown sugar
- 1/4 cup Heavy cream
- 1/3 cup Chopped nut meats (pecans or walnuts)
- 1/4 pound Pecans, in shell
- 1/3 pound Hickory nuts, in shell
- 1 tablespoon Butter (Quantity estimated (not specified in original recipe))
Instructions
- 1In a medium saucepan, combine the brown sugar and cream. Cook over medium heat, stirring constantly, until the mixture reaches the soft ball stage (235-240°F or 113-116°C). Use a candy thermometer for accuracy.
- 2Remove the saucepan from the heat and let it cool until you can comfortably bear your hand on the bottom of the pan. This usually takes about 5-10 minutes. Stir the mixture until it begins to thicken.
- 3Add the chopped nuts to the thickened mixture. When the mixture is too thick to pour easily, quickly spread it onto a buttered pan.
- 4Cut the candy into squares while it's still warm. Let it cool completely before serving.
