Sour Cream Candy

Ingredients
- 2 cups Brown sugar
- 1/2 cup Sour cream
- 1 tablespoon Butter (Used as a substitute for sour milk. Originally sour milk was used.)
- 1/4 teaspoon Cream of tartar
- 1 teaspoon Vanilla extract
Instructions
- 1In a medium saucepan, combine the brown sugar, cream of tartar, and sour cream (or sour milk and butter). Stir to combine.
- 2Cook over medium heat, stirring constantly, until the mixture reaches the soft ball stage (235-240°F or 113-116°C) when dropped into cold water. Use a candy thermometer for accuracy.
- 3Remove from heat and let cool slightly. Add the vanilla extract. Beat the mixture with a wooden spoon or a mixer until it becomes creamy and starts to lose its shine.
- 4Pour the creamy candy into a well-buttered pan and let it set completely. Cut into squares or desired shapes once firm.
