Ingredients

  • 2 cups Brown sugar
  • 1/2 cup Sour cream
  • 1 tablespoon Butter (Used as a substitute for sour milk. Originally sour milk was used.)
  • 1/4 teaspoon Cream of tartar
  • 1 teaspoon Vanilla extract

Instructions

  1. 1In a medium saucepan, combine the brown sugar, cream of tartar, and sour cream (or sour milk and butter). Stir to combine.
  2. 2Cook over medium heat, stirring constantly, until the mixture reaches the soft ball stage (235-240°F or 113-116°C) when dropped into cold water. Use a candy thermometer for accuracy.
  3. 3Remove from heat and let cool slightly. Add the vanilla extract. Beat the mixture with a wooden spoon or a mixer until it becomes creamy and starts to lose its shine.
  4. 4Pour the creamy candy into a well-buttered pan and let it set completely. Cut into squares or desired shapes once firm.
