Instructions
- 1Beat the eggs very light. Gradually sift in enough flour to make a stiff paste. Work the dough until smooth.
- 2Break off a piece of the dough and roll it out very thin on a floured surface. Repeat with remaining dough. Let the rolled-out dough dry slightly. Cut all but one piece into long strips, about one inch wide. Fold the remaining piece in layers and cut into very fine noodles.
- 3Bring a large pot of salted water to a boil. Add the large noodles and cook until tender. Drain in a colander. Stir in 2 tablespoons of butter.
- 4Heat 1 tablespoon of butter in a frying pan. Brown the fine noodles in the butter.
