Instructions

  1. 1In a large bowl, sift the flour. Pour in the buttermilk, and beat thoroughly until combined. Add the salt and the well-beaten egg yolks. Mix well.
  2. 2In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the stiffly-beaten egg whites into the flour mixture. Sift the baking soda with the teaspoon of flour, and add to the batter. Mix well. Heat the butter or butter-substitute in a frying pan over medium-high heat. Drop spoonfuls of the batter into the hot butter. Fry until golden brown, about 2-3 minutes per side. Baste the grease over them with a spoon until they are nicely browned.
