Ingredients
- 6 units Large apples
- 1 pint Water
- 3 tablespoons Sugar
- 1 unit Egg whites
- 1 tablespoon Sugar
- 1/2 teaspoon Lemon juice (Quantity estimated (not specified in original recipe))
- 1/4 teaspoon Nutmeg (Quantity estimated (not specified in original recipe))
Instructions
- 1Peel and core the apples. Place the apples in a saucepan, cover with the water and add the sugar. Simmer over medium heat until the apples are tender, about 15 minutes. Remove the apples from the syrup and drain.
- 2Wash the apple parings and simmer them in a small amount of water for 30 minutes. Strain the juice from the parings, add 2 tablespoons of sugar, and return to the heat. Let it boil for 5 minutes. Add a few drops of lemon juice and a pinch of nutmeg. Cool.
- 3Beat the egg white until stiff. Gradually add 1 tablespoon of sugar and continue beating until glossy. Lightly coat the tops of the apples with the meringue.
- 4Place the meringue-topped apples in a cool oven (about 200°F / 93°C) to dry the meringue. This should take about 10-15 minutes. Alternatively, you can use a broiler on low heat, watching carefully to prevent burning.
- 5Pour the cooled syrup around the frosted apples and serve.
