FRENCH PANCAKE
These classic French pancakes are light, airy, and delightfully simple to make. The recipe uses a batter of egg yolks, flour, and milk, then incorporates beaten egg whites for extra fluffiness. Cooked slowly in a pan with butter, these pancakes offer a delicate, buttery flavor and a tender texture, perfect for a comforting breakfast or brunch.
Ingredients
- 3 count Egg yolks
- 1/2 teaspoon Salt
- 1/4 cup Flour
- 1 cup Milk
- 3 count Egg whites
- 2 tablespoons Butter
Instructions
- 1In a bowl, whisk together the egg yolks, salt, and flour until smooth. Gradually add the cold milk, whisking constantly to prevent lumps.
- 2In a separate clean bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the yolk mixture until just combined. Be careful not to overmix.
- 3Heat a non-stick pan or griddle over medium heat. Add the butter and let it melt. Pour a portion of the batter into the hot pan. Cook slowly and evenly on one side for about 2-3 minutes, or until golden brown. Flip the pancake and cook for another 2-3 minutes, or until the other side is also golden brown. Serve immediately.
