French Doughnuts
These delicate French doughnuts are a delightful treat, much lighter and airier than traditional doughnuts. They're made with a simple batter of milk, water, butter, flour, and eggs, then fried to golden perfection. The final touch of powdered sugar adds a touch of sweetness and elegance, making them perfect for a special breakfast or dessert. The recipe is easy to follow and results in a satisfying, classic pastry.
Ingredients
- 1/2 pint Water
- 1/2 pint Milk
- 6 ounces Butter
- 1/2 pound All-purpose flour
- 6 count Eggs
- 4 cups Vegetable oil (Quantity estimated (not specified in original recipe))
- 1/2 cup Powdered sugar (Quantity estimated (not specified in original recipe))
Instructions
- 1In a medium saucepan, combine the water, milk, and butter. Heat over medium heat until the butter is melted and the mixture comes to a boil. Remove from the heat.
- 2Add the flour to the hot liquid and stir vigorously with a wooden spoon until a smooth dough forms. Continue stirring until the dough pulls away from the sides of the pan. Let cool slightly.
- 3Add the eggs one at a time, beating well after each addition until the batter is smooth and glossy. The batter should be thick and hold its shape.
- 4Heat the vegetable oil in a deep fryer or large, heavy-bottomed pot to 350°F (175°C). Transfer the batter to a pastry bag fitted with a star tip. Pipe the dough into ring shapes onto buttered paper. Carefully lower the rings into the hot oil and fry for 2-3 minutes per side, or until golden brown and puffed. Remove with a slotted spoon and drain on paper towels.
- 5Once the doughnuts are cool enough to handle, dust generously with powdered sugar before serving.
