Poor Man's Champagne

A refreshing Victorian-era mocktail combining Scotch ale with ginger beer to create a fizzy, champagne-like beverage. This simple two-ingredient drink was a popular affordable alternative to actual champagne.

Ingredients

  • 16 fl oz Scotch ale (1 pint; use a quality Scottish ale or amber ale)
  • 12 fl oz Ginger beer (1 bottle; use a good quality ginger beer, not ginger ale)

Instructions

  1. 1Ensure both the Scotch ale and ginger beer are well chilled before mixing. Place in refrigerator for at least 2 hours if not already cold.
  2. 2Pour the pint of chilled Scotch ale into a large jug or pitcher.
  3. 3Slowly pour the bottle of ginger beer into the jug with the ale. Pour gently down the side of the jug to preserve carbonation and prevent excessive foaming.
  4. 4Gently stir the mixture once or twice to combine. Pour immediately into chilled glasses and serve. The drink should be fizzy and refreshing.
