Poor Man's Champagne
A refreshing Victorian-era mocktail combining Scotch ale with ginger beer to create a fizzy, champagne-like beverage. This simple two-ingredient drink was a popular affordable alternative to actual champagne.
Ingredients
- 16 fl oz Scotch ale (1 pint; use a quality Scottish ale or amber ale)
- 12 fl oz Ginger beer (1 bottle; use a good quality ginger beer, not ginger ale)
Instructions
- 1Ensure both the Scotch ale and ginger beer are well chilled before mixing. Place in refrigerator for at least 2 hours if not already cold.
- 2Pour the pint of chilled Scotch ale into a large jug or pitcher.
- 3Slowly pour the bottle of ginger beer into the jug with the ale. Pour gently down the side of the jug to preserve carbonation and prevent excessive foaming.
- 4Gently stir the mixture once or twice to combine. Pour immediately into chilled glasses and serve. The drink should be fizzy and refreshing.
