A refreshing Victorian-era effervescent cocktail combining lemon ice, Jamaica rum, and ginger beer. This fizzy drink should be consumed immediately while still bubbling.

Ingredients

  • 0.5 pint Lemon ice (lemon sorbet or Italian ice) (About 1 cup or 240ml; use store-bought lemon sorbet or Italian ice)
  • 2 fluid ounces Jamaica rum (dark rum) (A wineglass is approximately 2 fl oz)
  • 12 fluid ounces Ginger beer, well chilled (One standard bottle; must be cold)

Instructions

  1. 1Place the lemon ice in a large glass or serving pitcher. Pour the Jamaica rum over the lemon ice and stir briskly to combine.
  2. 2Pour the entire bottle of iced ginger beer over the lemon ice and rum mixture while stirring briskly. The mixture will begin to effervesce and foam.
  3. 3Serve immediately while the drink is still effervescing and bubbling. The drink should be consumed right away to enjoy the fizzy texture.
