Vinegar Candy

A simple, old-fashioned hard candy flavored with vinegar and your choice of extracts.

Ingredients

  • 1 cup Water (Boiling)
  • 3 tablespoons Vinegar (White or apple cider vinegar)
  • 0.5 teaspoon Cream of tartar
  • 0.5 cup Butter (Melted)
  • 0.25 teaspoon Baking soda
  • 1 teaspoon Vanilla extract (Optional)
  • 0.5 teaspoon Lemon extract (Optional)
  • 2 drops Oil of peppermint (Optional)
  • 2 drops Oil of wintergreen (Optional)
  • 2 cups Granulated Sugar

Instructions

  1. 1In a medium saucepan, combine the boiling water, vinegar, sugar and melted butter.
  2. 2Place the saucepan over medium heat. Once the mixture reaches a boil, add the cream of tartar. Continue to boil, stirring constantly, until the mixture reaches the hard-crack stage (300-310°F or 149-154°C) on a candy thermometer. This will take approximately 15-20 minutes.
  3. 3If you don't have a candy thermometer, test the mixture by dropping a small amount into a bowl of cold water. If it hardens into brittle threads, it's ready.
  4. 4Remove the saucepan from the heat. Quickly stir in the baking soda and your choice of vanilla extract, lemon extract, oil of peppermint, or oil of wintergreen. The mixture will foam up.
  5. 5Pour the candy mixture onto a buttered baking sheet or into a buttered candy mold. Let it cool completely until hardened. Break into pieces to serve.
