Instructions
- 1In a medium saucepan, combine the sugar, cream of tartar, and water.

Continue to cook until the mixture reaches the hard-crack stage (300-310°F or 149-154°C) on a candy thermometer. This will take approximately 15-20 minutes.
- 3Carefully pour the hot candy mixture onto a lightly greased baking sheet or silicone mat. Let it cool completely until hardened. This will take about 10-15 minutes.
- 4Once the candy is completely cool and hardened, break it into irregular pieces. Store in an airtight container.
