Cinnamon Bars
Delicious and easy-to-make cinnamon bars with a sweet almond paste base and a simple frosting.
Ingredients
- 10 oz Almond Paste
- 5 oz Confectioners' Sugar (For the dough)
- 1 Egg White (Large egg, for the dough)
- 0.5 tsp Cinnamon
- 0.6666666666666666 cup Confectioners' Sugar (For the frosting)
- 1 Egg White (Large egg, for the frosting)
- 1 tsp Lard (For greasing the baking sheet)
- 1 tbsp All-Purpose Flour (For dusting the baking sheet)
Instructions
- 1In a large bowl, combine the almond paste, confectioners’ sugar (5 oz), egg white, and cinnamon. Mix until well combined, similar to making macaroons.
- 2Dredge a clean work surface with confectioners’ sugar. Knead the mixture slightly. Shape the dough into a long roll. Pat down the roll and use a rolling pin to roll it out to about one-fourth inch (0.6 cm) thick. The rolled piece should be approximately four inches (10 cm) wide.
- 3In a clean bowl, beat the egg white and confectioners’ sugar (2/3 cup) together until stiff peaks form, creating a smooth and spreadable frosting.
- 4Spread the frosting evenly over the rolled dough. Quickly cut the dough into strips that are four inches (10 cm) long and three-fourths inch (2 cm) wide. Use two knives to make clean cuts, wiping the knives on a damp cloth to keep them clean. This needs to be done quickly as the frosting will form a crust.
- 5Grease a baking sheet with lard and then dust it with flour. Carefully transfer the cut strips to the prepared baking sheet. Bake in a slow oven (300°F or 150°C) on the center rack for 20 minutes, or until lightly golden.
- 6Remove the cinnamon bars from the oven and let them cool completely on the baking sheet before serving.
