Instructions
- 1Preheat oven to 375°F (190°C). Peel the onions. Using an apple corer or a small knife, carefully remove the centers of the onions, creating a cavity for the stuffing. Be careful not to pierce the bottom of the onions.
- 2In a bowl, combine the grated Parmesan cheese, chopped hard-boiled eggs, and chopped parsley. Season with salt and pepper to taste. Mix well.
- 3Carefully fill each onion cavity with the prepared stuffing.
- 4Bring a pot of salted water to a boil. Gently place the stuffed onions in the boiling water and boil for 5 minutes. Remove the onions from the water and let them cool slightly. Roll each onion in flour, ensuring they are lightly coated. Heat olive oil (or butter) in a frying pan over medium heat. Fry the onions until golden brown on all sides, about 5-7 minutes.
- 5Grease a baking dish with the melted butter. Place the fried onions in the baking dish. Sprinkle the remaining grated Parmesan cheese over the onions. Bake in the preheated oven for 20-25 minutes, or until the onions are tender and the cheese is golden brown.
