Modern Bechamel Sauce

A classic white sauce, perfect for gratins, pasta dishes, and more. This modernized version of Bechamel Sauce No. 2 is easy to make and delivers a smooth, creamy texture.

Ingredients

  • 3 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 6 whole Black peppercorns
  • 0.5 medium Onion (Roughly chopped)
  • 0.5 medium Carrot (Sliced)
  • 0.25 teaspoon Mace (Ground)
  • 2 cups Whole milk
  • 0.125 teaspoon Salt (Pinch)
  • 0.125 teaspoon Nutmeg (Grated, pinch)
  • 0.5 cup Heavy cream

  1. 1In a medium saucepan, melt the butter over medium heat. Add the flour and whisk constantly until a smooth paste forms. Cook for 1-2 minutes, stirring continuously, to cook out the raw flour taste. Be careful not to brown the roux.
  2. 2In a separate saucepan, combine the milk, peppercorns, onion, carrot, and mace. Heat over medium heat until simmering. Reduce heat to low and simmer gently for 15 minutes, stirring occasionally, to infuse the milk with flavor. Remove from heat and strain the milk through a fine-mesh sieve, discarding the solids.
  3. 3Gradually whisk the warm, infused milk into the roux, a little at a time, ensuring each addition is fully incorporated before adding more. Continue whisking until the sauce is smooth and thickened. Bring to a gentle simmer and cook for 5 minutes, stirring constantly, to ensure the sauce is fully cooked and stable. Stir in the salt, nutmeg, and cream. Bring to a simmer briefly, then remove from heat. Strain the sauce through a fine-mesh sieve for an extra smooth texture (optional). Serve immediately.
