Welsh Rarebit with Ale

A classic Welsh Rarebit recipe, modernized for ease of preparation.

Ingredients

  • 1 tablespoonful Butter
  • 1/2 pound American cheese, shredded (Originally 'soft American cheese, broken into bits'. Modernized for easier preparation.)
  • 1 Egg
  • 1/2 teaspoonful Salt
  • 1 teaspoonful Mustard
  • 1/8 teaspoon Cayenne pepper (Originally 'a few grains of cayenne'. Estimated quantity.)
  • 1/2 cup Ale

Instructions

  1. 1In a saucepan or double boiler, melt the butter over medium heat.
  2. 2Add the shredded cheese and ale to the melted butter. Stir until the cheese begins to melt.
  3. 3In a small bowl, whisk together the salt, mustard, cayenne pepper, and egg until well combined.
  4. 4Once the cheese is melted, add the egg mixture to the saucepan. Cook, stirring constantly, until the mixture thickens and is heated through, about 2-3 minutes.
