Welsh Rarebit

A classic Welsh Rarebit recipe.

Ingredients

  • 1 pound American cheese (Use a mild American cheese for best results.)
  • 1 wineglassful Ale (Use a good quality ale. The original recipe suggests old ale.)
  • 5 slices Toast (Crusts trimmed.)

Instructions

  1. 1Grate the American cheese. Place the grated cheese in a tin or porcelain-lined saucepan.
  2. 2Add ale to the cheese, enough to thin it. Place the saucepan over low heat and stir constantly until the cheese is melted and smooth.
  3. 3Toast the bread slices and trim the crusts. Place a slice of toast on each plate. Pour the melted cheese over each piece of toast, covering it completely. Serve immediately while hot.
