Welsh Rarebit
A classic Welsh Rarebit recipe.
Ingredients
- 1 pound American cheese (Use a mild American cheese for best results.)
- 1 wineglassful Ale (Use a good quality ale. The original recipe suggests old ale.)
- 5 slices Toast (Crusts trimmed.)
Instructions
- 1Grate the American cheese. Place the grated cheese in a tin or porcelain-lined saucepan.
- 2Add ale to the cheese, enough to thin it. Place the saucepan over low heat and stir constantly until the cheese is melted and smooth.
- 3Toast the bread slices and trim the crusts. Place a slice of toast on each plate. Pour the melted cheese over each piece of toast, covering it completely. Serve immediately while hot.
