Welsh Rarebit

A classic savory dish made with cheese, seasonings, and eggs, served on toast or crackers.

Ingredients

  • 1 tablespoon Butter
  • 1/2 pound Cheddar cheese, grated
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Paprika
  • 1/2 cup Heavy cream
  • 2 large Large eggs

Instructions

  1. 1Grate the cheese if not already grated. Measure out all ingredients.
  2. 2Melt the butter in a saucepan over medium heat. Add the grated cheese, salt, and paprika. Stir constantly until the cheese is melted and the mixture is smooth.
  3. 3In a separate bowl, whisk the eggs and cream together. Gradually add the egg mixture to the cheese mixture, stirring constantly until smooth and slightly thickened. Do not allow the mixture to boil. If necessary, cook over a double boiler or a bowl set over simmering water.
  4. 4Serve immediately on thin crackers, hot shredded wheat, granose biscuit, or on bread toasted on one side, placing the rarebit on the untoasted side.
