Ingredients

  • 1/2 teaspoonful Paprika
  • 1/2 cup Grated cheese
  • 1 tablespoon Butter (Quantity estimated (not specified in original recipe))

Instructions

  1. 1Prepare chou paste (recipe on page 140). Add paprika and grated cheese to the hot paste.
  2. 2Preheat oven to 400°F (200°C). Spoon the chou paste mixture onto buttered baking tins, forming strips approximately 3 inches long and 1 inch wide. Bake for 25-30 minutes, or until golden brown and puffed.
  3. 3Once cooled, cut down one side of each éclair and fill with cheese custard mixture (from the chou paste).
