Instructions
- 1Prepare chou paste (recipe on page 140). Add paprika and grated cheese to the hot paste.
- 2Preheat oven to 400°F (200°C). Spoon the chou paste mixture onto buttered baking tins, forming strips approximately 3 inches long and 1 inch wide. Bake for 25-30 minutes, or until golden brown and puffed.
- 3Once cooled, cut down one side of each éclair and fill with cheese custard mixture (from the chou paste).
