Cheese Aigrettes
Deep-fried cheese fritters.
Ingredients
- 1/2 cup Water
- 1/4 cup Butter
- 1/2 cup All-purpose flour
- 2 eggs Eggs
- 1 yolk Egg yolk
- 1/8 teaspoon Cayenne pepper (Quantity estimated (not specified in original recipe))

- 1/4 cup Grated Parmesan cheese

Instructions
- 1In a saucepan, combine the water and butter. Bring to a boil. Sift in the flour, salt, and cayenne pepper. Stir constantly and cook until the mixture pulls away from the sides of the pan, about 2-3 minutes. Remove from heat and let cool slightly.
- 2Add the eggs, one at a time, beating each egg thoroughly into the mixture before adding the next. Stir in the egg yolk. Lastly, stir in the grated Parmesan cheese.
- 3Heat the vegetable oil in a deep fryer or a deep saucepan to 350°F (175°C). Drop spoonfuls of the cheese mixture into the hot oil. Fry until golden brown, about 2-3 minutes. Do not overcrowd the pan. Remove with a slotted spoon and drain on soft paper towels.
