Cheese Croquettes

Delicious and crispy cheese croquettes, perfect as an appetizer or side dish.

Ingredients

  • 3 tablespoons Butter
  • 1/4 cup All-purpose flour
  • 2/3 cup Milk
  • 2 large Large eggs
  • 1 cup Mild cheddar cheese, cut in small cubes
  • 1/2 cup Grated Gruyère cheese
  • 1/2 teaspoon Salt (Quantity estimated (not specified in original recipe))
  • 1/4 teaspoon Cayenne pepper (Quantity estimated (not specified in original recipe))
  • 1 cup Breadcrumbs (For coating, quantity estimated (not specified in original recipe))
  • 3 cups Vegetable oil, for frying (For frying, quantity estimated (not specified in original recipe))

Instructions

  1. 1In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly. Gradually whisk in the milk until the sauce is smooth. Bring to a simmer, stirring constantly, until the sauce thickens. This should take about 5 minutes.
  2. 2Remove the sauce from the heat. Add the beaten egg yolks and whisk quickly to combine. Stir in the grated Gruyère cheese, salt, cayenne pepper, and cubed cheddar cheese. Mix until the cheese is melted and well combined.
  3. 3Spread the cheese mixture in a shallow pan and let it cool completely. Once cooled, cut the mixture into desired shapes (e.g., cylinders, ovals).
  4. 4Dip each croquette in breadcrumbs, then in beaten egg, and finally in breadcrumbs again. Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the croquettes in batches until golden brown and crispy, about 2-3 minutes per batch. Drain on paper towels.
