French Dressing, Chiffonade

A classic French dressing with added vegetables and egg, served with endive or lettuce.

Ingredients

  • 1/2 teaspoonful Salt
  • 1/4 teaspoonful Black pepper
  • 1/8 teaspoonful Cayenne pepper
  • 2 tablespoonfuls White wine vinegar or lemon juice
  • 6 tablespoonfuls Olive oil
  • 1/2 teaspoonful Prepared mustard
  • 1/2 teaspoonful Onion juice
  • 1 egg Hard-cooked egg, chopped
  • 1 teaspoonful Chives, chopped
  • 1 tablespoonful Red pepper, chopped
  • 1 tablespoonful Green pepper, chopped
  • 1 tablespoonful Cooked beets, chopped
  • as needed Endive or lettuce (Quantity estimated (not specified in original recipe))

Instructions

  1. 1In a bowl, mix salt, pepper, and cayenne pepper. Add vinegar or lemon juice and oil. If desired, add prepared mustard and onion juice. Mix well until emulsified.
  2. 2Add the chopped hard-cooked egg, chives, red pepper, green pepper, and cooked beets to the French dressing. Mix gently to combine.
  3. 3Serve the French dressing chiffonade with endive or any variety of lettuce.
