Escalloped Oysters
A classic oyster dish with a buttery, crumb topping.
Ingredients
- 1 cup Cracker crumbs
- 1/2 cup Butter
- 1/2 cup Heavy cream (Or strained oyster liquor.)
- 1 cup Oysters

Instructions
- 1In a bowl, stir the cracker crumbs into the melted butter until evenly combined.
- 2Heat the cream (or oyster liquor) in a blazer or saucepan. Add a layer of washed and drained oysters (about 1 cup). Sprinkle with a portion of the prepared crumb mixture, salt, and pepper. Add another layer of oysters, the remaining crumbs, salt, and pepper. Cover the pan.
- 3Cook the oysters, covered, for approximately 10 minutes. Do not stir the oysters during cooking.
