Epicurean Sandwiches

Ingredients

  • 4 tablespoons Butter
  • 1 teaspoon Mustard
  • 4 large Hard-boiled eggs
  • 4 Boned anchovies
  • 4 Small pickles
  • 1 teaspoon Chives
  • 1 sprig Fresh tarragon

Instructions

  1. 1In a bowl, cream together the butter and mustard. Press the yolks of the hard-boiled eggs through a sieve and add them to the butter and mustard. Finely chop the anchovies, pickles, chives, and tarragon together. Add the chopped ingredients to the butter mixture and combine well.
  2. 2Cut the stale bread into fingers or other shapes. Spread the mixture evenly on half of the bread slices. Top with the remaining bread slices to form sandwiches.
