Cupid's Butter Sandwiches

Ingredients

• 4 yolks Hard-boiled eggs
• 1 cup Butter
• 1/3 cup Powdered sugar
• 1 teaspoonful Orange juice
• 1 grating Orange rind
• Angel cakelets or slices of angel cake

Instructions

1. 1Cream the butter in a bowl. Gradually add the yolks of the hard-boiled eggs, which have been passed through a potato ricer or sieve, the powdered sugar, and the orange juice. Mix until well combined.
2. 2Spread the butter mixture upon thin slices of angel cake, prepared for sandwiches, or upon angel cakelets or fingers. Press two slices together to form a sandwich and serve immediately. If not serving immediately, keep the sandwiches covered in a cool place.
