Sardine or Anchovy Sandwiches with Canapés

- 2 large Hard-boiled eggs

Instructions
- 1In a wooden bowl, pound the flesh of the sardines or anchovies with the sifted yolks of the hard-boiled eggs until a smooth paste forms. Season with paprika, chopped pimentos, and chopped truffles.
- 2Gently fold in the heavy cream that has been beaten until firm. Season with salt and additional paprika to taste.
- 3Spread the fish mixture on bread slices to make sandwiches. Garnish the plate with three or four canapés.
