Instructions

  1. 1In a wooden bowl, pound the flesh of the sardines or anchovies with the sifted yolks of the hard-boiled eggs until a smooth paste forms. Season with paprika, chopped pimentos, and chopped truffles.
  2. 2Gently fold in the heavy cream that has been beaten until firm. Season with salt and additional paprika to taste.
  3. 3Spread the fish mixture on bread slices to make sandwiches. Garnish the plate with three or four canapés.
