Wheat (or Flannel) Cakes

A recipe for making wheat cakes, also known as flannel cakes, similar to modern pancakes.

Ingredients

  • 1 1/2 pints All-purpose flour
  • 1 tablespoonful Brown sugar
  • 1 teaspoonful Salt
  • 2 heaping teaspoonfuls Royal Baking Powder
  • 2 Eggs
  • 1 1/2 pints Milk
  • as needed Maple syrup

Instructions

  1. 1In a large bowl, sift together the flour, brown sugar, salt, and Royal Baking Powder. In a separate bowl, whisk the eggs and milk. Add the wet ingredients to the dry ingredients and mix until just combined, creating a smooth batter that runs in a continuous stream from a pitcher.
  2. 2Heat a lightly oiled griddle or frying pan over medium heat. Pour about 1/4 cup of batter onto the hot griddle for each pancake. Cook until golden brown on both sides, about 2-3 minutes per side. The cakes should be about the size of tea saucers.
  3. 3Serve the wheat cakes immediately with maple syrup.
