Stewed Corn

A simple recipe for stewed corn.

Ingredients

  • 1 quart Canned corn
  • as needed Cold water
  • as needed Milk
  • 1 tablespoonful Butter
  • as needed Flour
  • to taste Salt

Instructions

  1. 1Place 1 quart of canned corn in its own liquor in a heat-safe bowl or pot. Set this vessel in a larger pot of hot water (creating a double boiler). If the corn seems too dry, add a little cold water.
  2. 2When the corn is tender, pour in enough milk to cover it. Bring the mixture to a boil. In a separate small bowl, roll 1 tablespoonful of butter in flour. Add this to the boiling corn and milk, and season with salt to taste. Stew gently, stirring well, for 3 or 4 minutes.
  3. 3Turn the stewed corn into a deep dish and serve immediately. Keep the vessel containing the corn closely covered while it is cooking to preserve the color and facilitate the cooking process.
