- 3 slices Citron

Instructions
- 1Sift together the flour, sugar, salt, and baking powder in a large bowl. Cut in the butter until the mixture resembles coarse crumbs. In a separate bowl, whisk the eggs. Add the beaten eggs, nearly all of the milk, and orange extract to the flour mixture. Mix until a smooth dough forms, being careful not to overwork it.
- 2Lightly flour a clean work surface. Turn out the dough and roll it with a rolling pin to about 1/4 inch thickness. Cut the dough into the shape of small envelopes using a knife. Place the cut shapes on a baking tin. Brush the tops with the remaining milk. Place three thin slices of citron on each and sprinkle with a few caraway seeds. Bake in a moderate oven at 350°F (175°C) for 20 minutes.
