Ingredients

  • 2 cups All-purpose flour
  • 4 teaspoons Baking powder
  • 1/3 teaspoon Salt
  • 2 tablespoons Butter (or vegetable shortening) (Originally lard. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)
  • 1 Egg
  • 2/3 cup Milk
  • 1 tablespoon Granulated sugar
  • 1/2 teaspoon Ground cinnamon

Instructions

  1. 1In a large bowl, whisk together the flour, baking powder, and salt.
  2. 2Cut in the butter (or shortening) into the flour mixture using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. 3In a small bowl, beat the egg. Add all but one teaspoon of the beaten egg to the flour mixture. Gradually add the milk, mixing with a knife until a soft dough forms.
  4. 4Pat the dough into a square shape, about 1/2 inch thick. Brush the top with the remaining teaspoon of egg and sprinkle with the sugar and cinnamon (mixed thoroughly). Cut into 1 1/2 inch squares. Place the scones on a baking sheet.
  5. 5Preheat oven to 400°F (200°C). Bake for 12 minutes, or until golden brown.
