Abernethy Biscuit

A classic biscuit recipe.

Ingredients

  • 3 pints Flour
  • 2 tablespoonfuls Sugar
  • 1 teaspoonful Salt
  • 1 1/2 teaspoonfuls Royal Baking Powder
  • 4 tablespoonfuls Butter (or vegetable shortening) (Originally lard. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)
  • 2 tablespoonfuls Caraway seeds
  • 2 eggs Eggs
  • 1 pint Milk

Instructions

  1. 1Sift together flour, sugar, salt, and Royal Baking Powder. Rub in the cold butter (or vegetable shortening). Add caraway seeds, beaten eggs, and milk; mix into a smooth, firm dough.
  2. 2Flour the board. Turn out the dough, give it a few quick, vigorous kneadings. Roll out to a thickness of 1/2 inch. Cut into biscuits the size of a pudding saucer. Prick with a fork. Lay on a greased baking tin. Bake in a hot oven at 400°F (200°C) for 15 minutes.
