Scotch Pancakes
A classic recipe for Scotch Pancakes, also known as drop scones, perfect for a simple and delicious breakfast or tea-time treat. Serve with marmalade, jelly, lemon, and sugar.
Ingredients
- 1 pint Milk
- 2 tablespoonfuls Butter (melted)
- 4 Eggs
- 0.6666666666666666 cupful Flour
- 1 teaspoonful Royal Baking Powder
- pinch Salt
- as needed Marmalade or Jelly (for spreading)
- as needed Sliced Lemon (for serving)
- as needed Sugar (for serving)
Instructions
- 1Sift together the flour, salt, and Royal Baking Powder in a bowl.
- 2Add the milk, eggs, and melted butter to the dry ingredients. Mix until you have a thin batter.
- 3Heat a small, round frying pan or griddle over medium heat. Lightly grease the pan with a little butter. Pour about 1/2 cupful of batter into the pan, turning the pan to spread the batter thinly. Cook until the bottom is browned, then flip and cook the other side until golden. The pancake will rise up as it cooks.
- 4Spread each pancake with marmalade or jelly. Roll up and serve with sliced lemon and sugar.
