Ingredients
- 1 lb Pork, lean and fat (3/4 lean, 1/4 fat)
- 1 lb Salt
- 1/4 lb Black pepper
- 1 teacupful Sage
- as needed Flour
- as needed Butter (or neutral oil)

Instructions
- 1Chop the pork very fine, ensuring a ratio of 3/4 lean meat to 1/4 fat. Mix the meat with salt, pepper, and sage.
- 2Warm the meat mixture so it's easy to handle. Form a portion of the mixture into small patties, mixing a little flour into them. Pack the remaining mixture into jars for later use.
- 3When ready to use, form the packed meat into small cakes. Flour the outside of the cakes. Fry the cakes in butter or a neutral oil over medium heat until cooked through and golden brown, about 5-7 minutes per side. Do not cover the sausages while frying. To prevent bursting, do not pierce the sausages with a fork while turning.
