Lentil Sausages

Lentil Sausages

These hearty lentil sausages offer a satisfying and flavorful vegetarian alternative to traditional meat-based sausages. The lentils are soaked and cooked to tender perfection, then combined with breadcrumbs, onions, herbs, and spices for a rich, savory taste. They are then shaped, coated, and browned to a golden crisp, perfect for serving with gravy or your favorite sides.

  • 1 tablespoon Onion, finely chopped (Quantity estimated (not specified in original recipe))
  • 1/2 teaspoon Powdered mixed herbs (Quantity estimated (not specified in original recipe))
  • 1/4 teaspoon Nutmeg, powdered (Quantity estimated (not specified in original recipe))
  • 1/2 teaspoon Salt (To taste. Quantity estimated (not specified in original recipe))
  • 1/4 teaspoon Black pepper (To taste. Quantity estimated (not specified in original recipe))
  • 2 tablespoons Fat (vegetable oil or butter) (For frying. Quantity estimated (not specified in original recipe))
  • 1 large Egg (For coating. Quantity estimated (not specified in original recipe))
  • 1/2 cup Bread crumbs (for coating) (For coating. Quantity estimated (not specified in original recipe))

Instructions

  1. 1For each serving, soak 1 tablespoon of lentils in water overnight. Drain the lentils and spread them on a dish for a day.
  2. 2Finely chop the soaked lentils. Cook them gently in a covered saucepan with water for about 1 hour, adding water as needed to prevent sticking. The lentils should be fully cooked.
  3. 3Stir in about twice the bulk of the cooked lentils in bread crumbs, finely chopped onion, powdered mixed herbs, nutmeg, salt, and pepper to taste. Add a little drippings (vegetable oil or butter) to make the mixture fairly moist.
  4. 4When cool, shape the mixture into sausages, cutlets, or round cakes. Coat them with beaten egg and bread crumbs.
  5. 5Heat a little fat (vegetable oil or butter) in a frying pan over medium heat. Brown the sausages in the pan, turning them until they are golden brown on all sides. Alternatively, bake them in a preheated oven at 375°F (190°C) for 20-25 minutes, or until golden brown.
  6. 6Serve the lentil sausages hot with gravy or diluted meat extract. They are also delicious when fried overnight and reheated in the gravy.
