Plum Pie
A classic plum pie recipe from the Royal Baker Pastry Cook.
Ingredients
- 3 cupfuls Plums
- 1 1/2 cupfuls Sugar
- 3 cupfuls Pie crust (Paste No. 5)
- 1 each Egg
Instructions
- 1In a saucepan, combine the plums with a small amount of water. Simmer over medium heat until the plums are tender. This should take about 10 minutes.
- 2Stir in the sugar and continue to simmer for another 2-3 minutes, until the sugar is dissolved and the mixture is slightly thickened.
- 3Line a pie plate with the pie crust. Wet the edges of the crust with water. Fill the pie crust with the plum mixture. Cover the pie with the remaining crust, crimping the edges to seal. Brush the top with a beaten egg.
- 4Preheat oven to 425°F (220°C). Bake for 20 minutes, or until the crust is golden brown.
