Fried Tomatoes

A simple recipe for fried tomatoes.

Ingredients

  • 4 medium Ripe tomatoes
  • 1/2 cup All-purpose flour
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 4 tablespoons Butter (or vegetable shortening) (Originally lard. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)

Instructions

  1. 1Slice the tomatoes into 1/4-inch thick slices. Pat them dry with a paper towel.
  2. 2Place the flour in a shallow dish. Season with salt and pepper. Dip each tomato slice into the flour, ensuring both sides are coated.
  3. 3Melt the butter (or vegetable shortening) in a large skillet over medium-high heat until shimmering. Carefully place the floured tomato slices in the skillet, ensuring not to overcrowd the pan. Fry for 2-3 minutes per side, or until golden brown and tender.
