- 1 quart White beans
- 2 quarts Water
- 1 pound Salt pork
- as needed Black pepper
- 1 tablespoon Molasses
- as needed Water

Instructions
- 1Place 1 quart of white beans in a tin pan and cover with 2 quarts of lukewarm water. Let it sit on the back of the stove or a warm place for several hours, ideally starting early in the morning (around 8 o'clock).
- 2Prepare an earthen bean-pot. Place the uncooked salt pork in the bottom of the pot.
- 3Cover the salt pork with the soaked beans. Add pepper (no salt, as the pork is sufficiently salty) and 1 tablespoon of molasses. Fill the pot with water. Set in a moderate oven at 350°F (175°C) and bake slowly for 6 hours, occasionally adding water if necessary to keep the beans moist.
