Tuna Loaf

Ingredients
- 1 1/2 cups Canned Tuna, drained
- 1 cup Fresh Bread Crumbs
- 2 Eggs (Yolks only may be used.)
- 1 teaspoon Lemon Juice
- 1 teaspoon Chopped Green Pepper
- 1 teaspoon Salt
- 1/4 teaspoon Paprika

- 2 tablespoons Butter (For white sauce)
- 1 cup Milk
- 1 Beaten Egg Yolk
Instructions
- 1In a bowl, mix the tuna, bread crumbs, egg yolks, lemon juice, chopped green pepper, salt, and paprika thoroughly. Use a fork to gently break apart the tuna.
- 2Mould the mixture firmly into a loaf shape. Lightly flour a work surface and roll the loaf in flour. Place the loaf in a buttered bread pan. Dot the top with butter. Bake in a moderate oven at 350°F (175°C) for 30 minutes.
- 3While the loaf is baking, prepare a vegetable white sauce. In a saucepan, melt 2 tablespoons of butter. Whisk in 2 tablespoons of flour until smooth. Gradually whisk in 1 cup of milk until the sauce thickens. Season with 1/4 teaspoon of salt. Remove from heat and stir in one beaten egg yolk.
