Ingredients

  • 1 tablespoon Granulated gelatin
  • 4 tablespoons Cold water
  • 4 tablespoons White vinegar
  • 1 tablespoon Lemon juice
  • 1 cup Boiling water
  • 2 tablespoons Pimento, cut fine
  • 4 tablespoons Granulated sugar
  • 1/2 teaspoon Salt
  • 2/3 cup Diced celery
  • 1/2 cup Shredded cabbage
  • 1 Green pepper, chopped
  • 4 Egg yolks
  • 1 teaspoon Mustard
  • 1/2 cup White vinegar
  • 4 tablespoons Granulated sugar
  • 1/2 cup Water
  • 1/4 teaspoon Paprika
  • 1 teaspoon Salt
  • 2 tablespoons All-purpose flour
  • 1/2 cup Sour cream or whipped cream (Quantity estimated (not specified in original recipe))

Instructions

  1. 1In a small bowl, sprinkle the granulated gelatin over the cold water. Let it stand for 5 minutes to soften.
  2. 2Add the boiling water to the softened gelatin and stir until completely dissolved. Then, add the vinegar, salt, lemon juice, and sugar. Mix well to combine.
  3. 3Once the jelly begins to set, add the celery, cabbage, green pepper, and pimento. Stir to distribute the vegetables evenly. Pour the mixture into a mold that has been rinsed with cold water. Place in a very cold place (refrigerator) for at least one hour, or until set.
  4. 4In a bowl, beat the egg yolks. Add the vinegar. In a separate bowl, mix the salt, mustard, sugar, paprika, and flour thoroughly. Slowly add the water, stirring constantly to avoid lumps. Pour this mixture into the egg yolks and vinegar. Cook slowly, stirring constantly, until the dressing thickens and becomes creamy. Thin with sour cream or whipped cream to desired consistency.
  5. 5Once the salad is set, serve it with the prepared salad dressing.
